Proposed more than 20 years ago in our business, sensory analysis has had various fortunes. Sometimes very used, it gradually integrated the development of cosmetic products with more or less success. If some laboratories use it successfully, it often gives rise to more intellectual than practical interest. Many books and publications are or have been regularly updated. More recently, this theme has been resumed.
